List of Ingredients For Egusi Soup

Here is a list of ingredient needed to prepare a delicious pot of Egusi soup.

  • 4 cups (500g) of grounded Egusi (Melon seeds)
  • 1 cup of (100g) red oil/palm oil
  • 1.5kg Beef and other assorted meat
  • dry fish and stockfish
  • 3 cooking spoons grounded crayfish
  • 6 balls of fresh pepper and a tablespoon of dried grounded Pepper (add according to your preference)
  • 3 balls of onions
  • Salt
  • 3 handful of Fresh Ugu leaves(Pumpkin leaves), spinach or bitter leaf
  • 5 cube of Maggi (stock cubes) beef flavor
  • 1 tablespoon of Ogiri
  • 1 tablespoon of Okpei
  • 3 tablespoon of corn starch or any other ingredient that will thicken your soup (cocoyam, yam, cassava starch, Garri, etc)

Egusi Soup Cooking Instructions

In order to prepare a delicious pot of Egusi soup, you’ll have to

  1. Soak the dried fish and the stockfish in boiled water for about 20 minutes. This procedure is done to kill the germs in the fish and also to make the fish tender so it can be broken into smaller chunks.
    2. Cook the meat and fish in 3 liters with the 2 cubes of Maggi beef flavored cubes till tender.
    3. Blend 2 balls onions, your pepper unit they are smooth. Then set them aside. Get you grounded Egusi, pour half a cup of water, 1 diced onion, a cube of Maggi and mix thoroughly until it becomes a paste.
    4. Place a dry pan on the fire, once it is heated pour the red oil into the pan and leave to heat for about 3 minutes.
    5. Pour the Egusi paste into the heated oil allow it to seat in the oil for about 5 minutes (keep a close eye on it so it does burn) then stir. You’ll have to stir fry the egusi until it becomes soft but solid and the oil has separated from the mix.
    6. Once it takes this form, pour your boil your seasoned meat and fish (step 2) crayfish, pepper, salt, Okpei, and Ogiri into the pan, stir a bit then cook for another 20 minutes.
    7. Wash and slice you preferred vegetable, then pour it into the pot, add your Maggi seasoning cubes and stir firmly. Take a taste or two to determine if you will add more salt or pepper. If it is too thick, add some water and if it is too watery, add the corn starch.
    8. Leave to simmer for 5 minutes and you’re done. Serve hot and complement the soup with hot meals (swallow) like amala, semolina, wheat, Eba, Agidi or Fufu.

Egusi Soup Cooking Time: 45 Min

Egusi soup takes 30 to 60 minutes to prepare depending on the size and heat applied.
